Mmmm... Aamrakhand

On Thursday my mother had to suddenly leave for Kolkata and i had to clean out her fridge for her. There was some hung curd and a few mangoes among other things. On Sunday i finally put the hung curd to good use. Shrikhand is one of my favorite desserts but i have never made it. So i decided to make shrikhand, but the mangoes had to be used too... so Aamrakhand it was.

You need: 3 cups hung curd, 12 tsps sugar, 1 tsp rose water, 2 pods crushed cardamom, pulp of 2 mangoes (i used the rasaal mango that you get very easily in hyderabad)

To make: Whip everything . Garnish with crushed pistachios. Chill and serve. You can reduce / increase the quantity of sugar on the basis of the sweetness of the mangoes.
